About a week ago, I had some raw milk that my mom gave me that I needed to use up. I was trying to think of something a little different and creative we could makeâand one thing I hadnât tried yet was flavoring the milk for ice cream. Iâve always loved that rich, buttery flavor, so I thought⌠why not a butterscotch caramel?
And let me just sayâit turned out so good. I made homemade fresh milled wheat vanilla ice cream cones to go with it, and the combination was absolutely amazing. This is definitely one of those recipes that feels like a treat in every way. My husband and I always enjoy making ice cream together, and itâs honestly one of my favorite desserts.
To be honest, Iâve never been a big âsweetsâ personâI usually lean more toward savory. But when I do want something sweet, I like it to be light and not overly heavy. And this one definitely does the trick. Itâs creamy, smooth, and perfectly sweet with that little buttery caramel touch.

Ice Cream Base:
⢠3 ½ cups raw milk
⢠1 cup coconut cream milk
⢠1 ½ tablespoons vanilla extract
⢠â cup maple syrup
Caramel Sauce:
⢠â cup coconut cream milk
⢠1 teaspoon butterscotch flavor
⢠1 tablespoon vanilla
⢠½ cup coconut sugar
⢠½ teaspoon salt
⢠1 ½ tablespoons dairy-free butter
Mix-ins:
⢠ž cup chocolate chips, roughly chopped

đŻ Instructions
1. Make the caramel sauce:
In a small saucepan, combine the coconut cream milk, coconut sugar, and salt over medium heat. Stir until the sugar dissolves and the mixture thickens slightly. Remove from heat, then stir in the butterscotch flavor, vanilla, and dairy-free butter. Let it cool to room temperature.
2. Prepare the ice cream base:
In a large bowl, whisk together the raw milk, coconut cream milk, vanilla extract, and maple syrup. Pour into your ice cream maker and churn according to the manufacturerâs directions.
3. Add the caramel:
When the ice cream is almost done churning, slowly drizzle in about half (or a little more) of the cooled caramel sauce. Save the rest for topping later.
4. Add the chocolate chips:
Roughly chop your chocolate chips and fold them into the ice cream after adding the caramel.
5. Serve & enjoy:
Scoop into bowls or cones, drizzle with extra caramel, and sprinkle a few of those chopped chocolate chips on top.
